Masala corn is a super quick Indian snack that's perfect not just as a popcorn alternative when watching movies but also on those moments you want to munch on something healthy.
This buttery sweet corn has incredible flavors thanks to the mix of chaat masala, lime juice and coriander.
Even though it's traditionally made with butter, it's super easy to turn it vegan by using plant-based butter instead.

Ingredients and substitutions
Plant-based butter — I used a knob of unsalted Flora plant-based butter for this fried corn masala. You can use your favorite salted or unsalted plant-based butter.
Sweetcorn — You can use canned or fresh corn in this recipe. If you choose to go for fresh corn, you'll need to cook it for 6-8 minutes in boiling water or steam them for 1-2 minutes in the microwave. For canned corn, all you have to do is drain and rinse it.
Chaat masala — Chaat masala is a zingy, slightly hot Indian spice mix that's just perfect for this corn snack. You can use a shop-bought chaat masala for convenience or make your own.
Chaat masala typically features a mix of cumin seeds, coriander seeds, amchur powder, black salt powder, ground ginger, carom seeds, dried mint and asafetida powder.
I used the Rajah chaat masala in this recipe.
Chili powder — Mild chili powder is perfect here, but if you want your corn to be fiery, you can use medium or hot red chili powder instead.
Lime juice — Freshly squeezed lemon juice adds extra brightness to this sweet corn chaat.
Cilantro — You can omit this if you don't like cilantro or substitute with fresh parsley or mint.
How to make sweet corn masala
Place a pan over medium heat and melt the plant-based butter in it. Add the sweetcorn and cook for 3-4 minutes until slightly golden.
Allow the corn to cool for a minute, then transfer to a large bowl.
Add the chaat masala, chili powder, salt, pepper, lime juice and cilantro.
Stir well to combine and serve warm.
Recipe notes and tips
- Chaat masala corn is best served immediately, and I don't recommend reheating it. It tastes quite good at room temperature, though.
- You can mix the corn with some mango chutney or green chutney for extra flavor.
- Other possible additions include chopped tomatoes and chopped green chili peppers.
