These delicious crispy potatoes are by far my favorite thing to make in the air fryer, and I love that they come out still fluffy on the inside but perfectly crispy on the outside.
And since there's just a bit of olive oil involved in this recipe, these air fryer crispy potatoes are quite healthy, so you can enjoy them guilt-free.
The potatoes are a perfect side dish for loads of dishes such as grilled veggie skewers, your favorite plant-based loaf or even a curry such as my yummy chickpea tomato curry.
But my absolute favorite way to serve them is as patatas bravas when paired with this delicious salsa brava sauce.

Ingredients you'll need
Potatoes - Yukon Gold or Maris Piper potatoes are best for this recipe. Cut the potatoes into same-sized pieces to ensure even cooking.
Oil - Use some extra virgin olive oil to help the potatoes crisp nicely. You only need to add one tablespoon per pound of potatoes. I don't recommend using cooking spray in this recipe.
Seasonings - I use a mix of Italian seasoning, paprika, salt and ground black pepper. Both sweet and smoked paprika work well, depending on your preference.
You can also add some onion powder or garlic powder, or have a look at the Substitutions and Variations section below for more seasoning ideas.
How to make air fryer crispy potatoes
Preheat your air fryer to 400°F (200°C). This step ensures that the potatoes will start cooking immediately and become crispy. Skip this step if your air fryer doesn't require preheating.
Toss the potato cubes with one tablespoon of olive oil, then add the Italian seasoning, smoked paprika, ground black pepper, and salt.
Toss everything together until the potatoes are evenly coated with the seasoning.
Spread the seasoned potatoes in the air fryer basket in a single layer. Work in batches if needed, depending on the size of your air fryer.
Cook the potatoes in the air fryer for 18-20 minutes at 400°F (200°C). Halfway through the cooking time, open the air fryer and shake the basket or use a spatula to turn the potatoes.
Check if the potatoes are crispy to your liking and cooked through. They should be golden brown on the outside and fork-tender on the inside. If needed, cook them for an additional 2-3 minutes.
Remove the potatoes from the air fryer and serve them hot.
Substitutions and variations
- Garlic and rosemary potatoes - Omit the paprika and instead mix in some minced garlic and finely chopped fresh rosemary. This combination should be a perfect accompaniment for Mediterranean-style dishes.
- Curry spiced potatoes - Replace the Italian seasoning and paprika with a blend of curry powder, a pinch of turmeric, and a bit of ground cumin. The result will be a warm and spicy flavor that goes perfectly with Indian-inspired vegan dishes.
- Cajun-style potatoes - For some bold and spicy flavors, use a Cajun seasoning blend instead of Italian seasoning and paprika.
- Herb lemon potatoes -Skip the paprika and season the potatoes with a mix of fresh herbs such as oregano, basil, parsley and a bit of lemon juice after cooking.
Tips for making the best crispy roast potatoes in air fryer
- Make sure you don't overcrowd the basket - you need to leave enough room for the air to circulate.
- Leave the skins on if you like even crispier potatoes. Just ensure you give them a good scrub before cutting them into cubes.
- Temperatures and times may differ according to the air fryer model you have. I tested this recipe in a Cosori Smart Air Fryer Oven Dual Blaze 6.4L.
- These air fryer potatoes are best served immediately. If you do have leftovers, they will keep well in an airtight container in the fridge for up to 3 days. Simply reheat them in the air fryer for 4-5 minutes at 400°F (200°C).
