How to make black bean pumpkin soup
In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery and sauté for 5-6 minutes until softened.
Add the minced garlic and ginger and continue to cook for another minute until fragrant.
Stir in the ground cumin, ground coriander, dried thyme, smoked paprika, and turmeric. Cook for another minute until fragrant.
Pour in the black beans, pumpkin pureé, diced tomatoes (with juice), and vegetable broth.
Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 20 minutes.
Remove the lid and stir in the coconut milk. Allow the soup to get to a simmer again, then stir in the fresh lime juice and cilantro.
Season to taste and serve warm with tortilla chips or strips.
Leftovers and storage
- Store leftovers in an airtight container in the fridge for up to 4 days.
- This soup freezes well. Cool completely and store in freezer-safe containers for up to 3 months.

- 2 tablespoons olive oil
- 1 medium onion, diced
- 1 medium carrot, diced
- 2-3 celery stalks, diced
- 2 garlic cloves, minced
- 1 tablespoon fresh ginger, minced
- ½ tablespoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- ½ teaspoon dried thyme
- ½ teaspoon ground turmeric
- 2 cans (14 oz / 400 g) black beans, drained and rinsed
- 1 can (14 oz / 400 g) diced tomatoes
- 1 cup (250 g) pumpkin puree
- 3 cups (750 ml) vegetable stock
- 1 cup (250 ml) coconut milk
- 2 tablespoons lime juice
- A handful of fresh coriander, roughly chopped
- Salt and freshly ground black pepper to taste

This is delicious! For a small additional kick I added 1 Tbsp of homemade Chili seasoning. Yum! Served with a salad topped with salmon and avacado cilantro lime dressing. Can't wait to enjoy my left overs throughout the weekend!

Very tasty! I love bold flavors, so I doubled the spices and added a bit of salt/pepper. Tried it with tortilla chips last night, but want to try it over rice next.

So I just made this but I variation.
I used homemade pumpkin puree.
I cut the pumpkin in half and diced one side and used the other for puree.
I thoroughly spiced the pumpkin and put it in the oven for 30 mins.
I thought the consistency was pretty chunky for soup, with all the diced veggies so I made a mess and used a stand mixer to puree much of the contents.
The secret to a good pumpkin soup is to add a little sugar 😉
