These vegan baked oats are a delicious yet super easy breakfast loaded with wholesome ingredients. They taste just like a blueberry muffin and will keep you full for hours.
I don't know about you, but mornings are always a little crazy for me. Between trying to wake up, get myself ready, and maybe do a bit of exercise, there's not much time for a fancy breakfast.
That's why I love this vegan baked oats recipe. It's seriously the easiest thing ever, and it tastes absolutely delicious!
The best part is how simple it is to make. All you do is toss a few ingredients together straight into a baking dish and let the oven do the rest. While it's baking, you can get ready for your day. By the time you're finished, breakfast is hot and ready to go.
Plus, it's really tasty and filling! You can also customize it with all your favorite add-ins - nuts, chocolate chips, berries, you name it!

Plant-based milk - Use your favorite kind! I usually go with almond or oat milk, but soy, cashew, or whatever you have on hand works just fine.
Maple syrup - This adds a touch of sweetness, but you can also use agave nectar or a sprinkle of brown sugar.
Chia seeds - These little guys are nutritional powerhouses! They add a bit of healthy fat and help thicken the oats.
Ground cinnamon - A classic warm spice that pairs beautifully with the other flavors.
Baking powder - This helps the oats rise and get a bit fluffy.
Frozen blueberries - You can use any berries you like, or even mix it up with chopped dried fruit. I like that frozen ones don't make the batter too watery.
How to make vegan baked oatmeal
Preheat your oven to 375°F (190°C). Lightly grease a medium-sized baking dish.
Mash the banana in the baking dish, then add the rolled oats, plant-based milk, maple syrup, vanilla extract, salt, chia seeds, ground cinnamon and baking powder.
Stir well to combine, then gently fold in the frozen blueberries. Don't overmix, or the blueberries will bleed into your batter.
Add some extra blueberries on top and press them slightly into the batter. Bake for 25-30 minutes or until golden brown and set.
Let the baked oats cool for a few minutes before serving. Enjoy warm with your favorite toppings like fresh fruit, nuts, plant-based yogurt, or a drizzle of nut butter.
Helpful tips for the best vegan baked oats
- Depending on the ripeness of your banana and the type of oats you use, you might need to slightly adjust the amount of plant-based milk.
- You can use a blender to mix all the ingredients except for the blueberries into a batter. Pour the batter into the baking dish and then gently fold in the blueberries before baking.
- Use small ramekins to bake the oats into individual portions. Adjust baking time if using smaller dishes.
- Keep an eye on your oats, especially if baking in smaller ramekins. Overbaking will dry them out.
