Ingredients and substitutions
Avocado - A ripe avocado is best in this avocado sauce. When choosing avocados, make sure they yield to firm, gentle pressure. It should not feel mushy when you touch it, though - you want them just slightly soft.
Fresh spinach - Baby spinach is best for this sauce. If you're not a fan of spinach, you can substitute it with curly kale.
Fresh basil and mint - These fresh herbs add loads of flavour to this avocado pesto.
Garlic - Feel free to add more than one garlic clove to the pesto.
Olive oil - You can substitute olive oil with avocado oil.
Lemon - You can adjust the amount of lemon juice to your liking. Lime juice is another great option.
Pasta - Any type of short pasta will do in this recipe. I often make it with orecchiette as they have the perfect shape for this type of sauce.
Shallot - The mild flavour of shallot is perfect for this pasta recipe, but you can use regular onion, too.
Peas - I used frozen petit pois, but any kind of peas would do.
How to make avocado pasta sauce
Start by making the avocado pesto.
Add the fresh spinach, avocado, basil and mint leaves, garlic, olive oil, lemon and salt to a food processor.
Pulse until smooth and creamy, scraping down the sides as needed. Set the avocado pest aside while you make the pasta.
Bring a large pot of water to a boil and cook the pasta according to the instructions on the package. Reserve 1-2 cups of pasta water before draining.
Heat the olive oil in a large, deep pan and cook the shallot for 2-3 minutes on medium heat until softened.
Add the peas and spinach and continue to cook for 3-4 minutes or until the spinach has wilted to your liking. Turn off the heat.
Transfer the cooked pasta to the pan and stir in the avocado pesto. Add some of the pasta water to thin it. Toss the pasta until well covered in sauce, adding more pasta water as needed until you reach your preferred consistency.
Stir in the sundried tomatoes, pine nuts and rocket salad-season to taste and serve topped with extra rocket salad if you like.
Leftovers and storage
- The avocado sauce will keep well in the fridge for up to 5 days in an airtight container.
- The avocado pasta is great served immediately, but it's also delicious served cold, pasta salad style.
- You can freeze the avocado sauce for up to three months. Thaw it overnight before serving it over freshly boiled pasta.
Recipe notes and tips
- Add any extra veggies you want to this pasta. Spring veggies such as asparagus tips or green beans are great choices. Some cherry tomatoes added right at the end are another idea.
- If you want to keep this pasta recipe low carb, use zucchini noodles instead of pasta.
- Add a can of drained and rinsed chickpeas to this avocado pasta if you'd like it to have extra protein.
- Serve this pasta with some grated vegan Parmesan and some extra lemon juice.

Ingredients
For the avocado pesto
- 75 g (2.5 oz) fresh spinach
- 1 medium avocado, stone removed, halved
- 10-12 fresh basil leaves
- 5-6 fresh mint leaves
- 1 garlic clove
- 2 tablespoons olive oil
- Juice of half a lemon
- ½ teaspoon salt
To make the pasta
- 300 g (10.5 oz) pasta
- 1 tablespoon olive oil
- 1 large shallot, finely chopped
- 100 g (3.5 oz) fresh or frozen peas
- 75 g (2.5 oz) fresh spinach
- 100 g (3.5 oz) sundried tomatoes, roughly chopped
- 20 g (¼ cup) pine nuts
- A handful of rocket salad (arugula)
- Salt and freshly ground black pepper to taste
