- 1 oz (30 g) fresh cilantro, leaves and stems
- 1 oz (30 g) raw cashew nuts
- 2 small garlic cloves
- ½ small jalapeño, deseeded and sliced
- 4 tablespoons olive oil
- Juice of 1 small lime
- 1 tablespoon agave syrup
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
Instructions
- Bring a pot of water to a boil, salt it generously, then cook your pasta until al dente according to package instructions. Just before draining, scoop out 1 cup of the starchy cooking water and set it aside.7 oz dry pasta
- In a blender or food processor, combine cilantro (leaves and tender stems), raw cashews, garlic, jalapeño, olive oil, lime juice, agave syrup, salt, and black pepper. - Pour in ½ cup of the reserved hot pasta water and blend again until the mixture turns silky and bright green.

Notes
- Don't toss the cilantro stems as they blend down easily and add tons of flavor.
- Add some pasta water to the blender after pouring the sauce and blitz to clean. You can than use that to loosen the sauce when tossing with the pasta.
