Heat the olive oil in a large pot over medium heat. Add the diced onion and carrots to the pot. Cook, stirring occasionally, for 6-8 minutes, or until the vegetables are softened.

Next, stir in the garlic and ginger, and cook for another minute until fragrant.

Stir in the cumin, coriander, paprika, and cinnamon. Stir well to coat the vegetables, and let the spices cook for another minute.

Add the dry lentils, pumpkin puree and vegetable stock and stir to combine everything evenly.
