This lentil minestrone soup is everything a cold-weather bowl should be — extra comforting, packed with vegetables and hearty enough to be dinner all on its own. It comes together in a single pot, and the lentils make it really different.
Heat the olive oil in a large pot over medium heat. Add the onion, leek, carrot and celery and cook for 7-8 minutes, stirring occasionally, until softened.

Add the garlic and the chopped oregano, sage and thyme and cook for 1 minute more, until fragrant.

Stir in the tomato paste and fry it for a full minute. Add the cherry tomatoes and break them up a little with your spoon.

Add the green lentils, vegetable stock and bay leaves. Bring to a boil, then reduce the heat, cover partially and simmer for about 20 minutes, until the lentils are almost tender.

Stir in the ditalini and simmer for about 10 minutes, until the pasta is al dente and the lentils are fully tender. Add a splash more stock or water if it gets too thick.

Stir in the shredded black kale and cook for 3-5 minutes, until wilted and tender. Season generously with salt and pepper, remove the bay leaves and serve hot.

Notes
Green or brown lentils work best here; avoid red, which will fall apart.
If you’re planning on having leftovers, it’s best to cook the ditalini separately and add it to each bowl.
