This creamy lemon butter beans recipe turns the humble canned beans into something truly amazing! The sauce is bright and super flavorful and super easy to make in just 25 minutes for a cozy yet high-protein dinner.
2can(14 oz / 400 g) butter beans, drained (reserve the water)
1cup(250ml)water from the canned beans
1cup(250ml)plant-based heavy cream
Juice and zest of 1 small lemon
2tablespoonsnutritional yeast
6-8fresh basil leaves, roughly torn
Instructions
Heat a large skillet over medium and melt the plant-based butter. Add the diced shallots and garlic and cook a few minutes until they soften.

Stir in the Italian herbs, chili flakes, salt, and pepper, and let everything cook for another minute.

Pour in the water from the beans together with the plant-based cream and bring it to a gentle simmer.
